Today is going to be a rather warm day. It is suppose to be in the 60's. I am hoping to cut back all the dead leaves off my herbs. I am also going to try to get my new beds ready for planting hopefully in a few weeks? Our frost date is usually mid-May. I want to get a few new things planted. I often get too excited and then many things get killed off by a hard freeze. I am still learning patience. . . .

Well I am back. The weather here in Ky is finally warming up a bit and I am thinking about Spring! I have many plans for my herb garden this year. We are also going to build a chicken coop which is very exciting. I am sorry about not replying to all the comments. I have been busy through the winter months. Around the Corner.....
I never thought that I would anticipate the summer but I am. I am excited about gardening. I am excited to take the dogs for walks. I am excited to BBQ! This winter has flown by and I am glad. I love the winter but I miss cooking with herbs and placing vases of fresh flowers around our house. . . .

Cooler days have been beneficial in respect of renewing our interest in making soup. If you have never tried your hand at making your own potion, try it and you will be amazed at just how good homemade soup can be. Many Mediterranean vegetables are ideal candidates for the soup pot. One recent addition to our menu has been the butternut squash; this vegetable a member of the gourd family grows well here but has often been overlooked by us. 
Only last night, I made a Butternut Squash soup that will become a regularly used recipe by us, if you would like to try it here is the method. . . .

Chipotle butternut squash soup with herbed wheat bread Calabaza is the general Spanish word for winter squash. Butternut squash are called ayote here in La Ceiba, but apparently other types of squash are also called ayote as well. . . .

The warm weather continues to draw up delicious flower stalks from my Asian greens. I harvested a large colander full of tsatsoi leaves and flower spikes, as well as spikes from my joi choi in the hydroponic fence planters. The choi in the ground-level planters is barely starting to form central buds, as it gets less sun.

Vaccinium mytillus a Superfruit
 Blueberry is not the same as the Swedish Blåbär but they are closely related. The wild Bilberry Vaccinium mytillus is the same as Blåbär and it is a low-growing shrub and the wild or cultivated Blueberry Vaccinium corymbosum is a much taller shrub. I took this picture in the woods near my summerhouse, do you know I read somewhere that there are 250 miljon kilos of wild blueberries, bilberries in the Swedish woods each year and only 7% är picked and the rest are left for food to the wild animals or just fall to the ground. . . .

Thursday, January 24, 2008 Almost 5 PM here on the mountain. Just home from work and I'm kind of cross eyed from two busy days and an almost sleepless night thanks to Karl the unwonderful dog. There seems to be a point every year towards the end of January when the wild critters from the Groton State Forest yearn for a menu different than they can find in the woods. Last night in the bright moon and cold weather, wildlife came to visit and Karl went nuts. This critter thing is reminiscent of Maurice Sendak's Where the Wild Things Are except that my usual fear is that I'll never get back to sleep before it's time again for work. . . .

Chokas are simple “rustic” preparations of vegetables, used as a side dish or filling for breakfast, often served with flatbread or “sada roti”. Recipe for sada roti coming in next post. I also previously did the Roasted Saltfish Choka
These dishes originated with the Indian immigrants in Trinidad (and Guyana) and among the Trinis I know are now quite a delicacy, as few have the time (or even know how) to do this now, though they are not difficult recipes. All dishes refrigerate and reheat very well. . . .
